Everyone who knows me knows I love a good chicken dish! There is no reason healthy dinners have to be boring, flavourless and bland. Try this delicious dish to spice up your diet! It may be served with a side of salad, or steamed veggies! All macronutrients are calculated and show below recipe :)
Cajun Chicken with Minted Yoghurt
Preparation time: 10 minutes Cooking time: 20 minutes
1kg Chicken breast
2 tbsp Lemon juice
2 tbsp Olive oil
2 tbsp Cajun spice mix
Lemon wedges to serve
250g Chobani Fat Free Greek yoghurt
1/4 cup finely chopped mint leaves
Non-stick oil spray
1. Cut chicken into small, bite-sized pieces. Place in a ceramic, glass or plastic dish with a tight-fitting lid. Place lemon juice, oil and cajun spice mix in a small bowl and mix until combined. Pour marinade over chicken and mix through. Seal container with a lid and refrigerate for several hours or overnight.
2. For minted yoghurt, combine yoghurt and mint in a bowl and season to taste with a little salt and pepper.
3. Heat non-stick fry pan and spray lightly with non-stick spray. Cook chicken in small batches until cooked through. Serve with minted yoghurt and lemon wedges on the side.
